Zimtsterne (Cinnamon Stars)

These star-shaped cookies are an indispensable part of Christmas in Germany. Here's how you can make your own!


375 g ground almond
5 egg whites
a pinch of salt
375 g sugar
2 teaspoons cinnamon


Beat the egg whites till the mixture resembles a fluffy cloud. At the same time slowly add the sugar and the salt. Put aside five table spoons of beaten egg whites for the icing. Add the almonds and the cinnamon. Roll out the pastry on a board sprinkled with sugar till it is about 1 centimetre thick. Then cut out stars. Place the stars on a tray covered in baking paper and add the icing. Bake the Zimtsterne at 160°C for about 25 minutes. Enjoy!
